Kale Potato Frittata
Frittata is one of my favorite things to make. It makes as a wonderful breakfast/brunch or dinner. Kind of like an omelet, except I find it more filling. Kale is a great match, both in texture and taste. It really adds something to the egg, onion, and potato mixture. The original recipe, which I’ve made so many times I don’t even look at it anymore.

In winter where I live, fresh vegetables are rather limited without making them travel thousands of miles. So it’s always nice to find a winter recipe with fresh, seasonal (or anytime) vegetables. Plus, it has a lovely, spicy flare.

This recipe yields 6 to 8 servings, and if I make it again, I’ll cut back on the size since it’s just me and Jason at my house.
The original recipe is from the Foodnetwork’s Giada De Laurentiis

Unfortunately, this dish didn’t come out as well as I thought it would. It was way too salty. Next time, I’d cut the salt completely from the dish. I’m also not so sure how I feel about really meat-intensive dishes, even if it was fake meat.

Okay, I know this is my portfolio, marketing, prosumer blog; however, I thought I’d branch it out a little into something I’m learning to love or loving to learn: cooking. I’m a vegetarian with a host of food allergies and have sometimes felt that food has been an upwards struggle throughout my life.
Last week was Jason’s 28th birthday and on Monday, I made him his favorite dish, manicotti. The following recipe is a mix from Golden Grain’s box, Jason’s mother, and my own improvisation.
