Jason and I love Indian food and we’re always looking for new recipes to try. This reicipe, originally from Chef Henry’s Chop Onions, Boil Water, is tasty and hearty. His recipe recommends serving with naan or roti bread. I’d love to find some other dishes to prepare with it in order to serve at a dinner party.

In winter where I live, fresh vegetables are rather limited without making them travel thousands of miles. So it’s always nice to find a winter recipe with fresh, seasonal (or anytime) vegetables. Plus, it has a lovely, spicy flare.

This recipe yields 6 to 8 servings, and if I make it again, I’ll cut back on the size since it’s just me and Jason at my house.
The original recipe is from the Foodnetwork’s Giada De Laurentiis

I love a good bowl of tomato soup with an accompanying grilled cheese sandwich. It’s something I grew up on. It reminds me of colder fall and winter weekends where my mom and I had been outside all day and needed something quick, hearty, and warm.

The original recipe comes from the Skinny Chef. Hers was a little more low-fat than mine and contained chicken.
This soup certain beats anything out of a can. (Sorry, mom.)

I wanted to do something different for Thanksgiving as I’m a vegetarian and not a traditionalist. My love of Thai food and pumpkin knows no bounds. This dish turned out to be very yummy. Though next time, I’ll add some more spices as Jason and I prefer hotter dishes.
The original recipe is from Henry Krauzyk and his blog, World Food at Home.

I’m a big fan of Enchiladas. I grew up on my mom’s enchiladas, but now that I’m a vegetarian, I have to search for non-meat alternatives. I even held an enchilada off with her before her wedding this summer: my eggplant almond ones vs. her chicken ones. But people were scared of eggplant. Yes, it’s a purple vegetable, people, a delicious purple vegetable.
And in trying something different, I made this spinach enchilada, based on this recipe. While the original recipe was low-fat, I added a bunch of cheese and made it bad for you. But delicious. It was, however, really runny and messy to eat. When re-heating, I added rice to soak up some of the juices.

Delicious. This was so delicious. It takes longer than I would like, so it’s not going to be a week day dish by any means.

My tofu chicken cooking came from some suggestions how to cook chicken in Cooking for Dummies and the general chicken and dumplings recipe originally came from ‘Chicken’ and Dumplings at VegCooking.

Both Jason and I think this dish is spicy enough, but not flavorful enough. Gretchen thought it was beyond perfect. But overall, it was pretty good. Plus, it’s a quick meal to make if you marinate the tofu in advance. (I ended up making a batch of cookies while I was waiting.)

Unfortunately, this dish didn’t come out as well as I thought it would. It was way too salty. Next time, I’d cut the salt completely from the dish. I’m also not so sure how I feel about really meat-intensive dishes, even if it was fake meat.

I love Thai food, and I’m always trying to make Thai dishes, despite not having very much success. Edible yes, but ending up more American than Thai. (This is what I get by being spoiled with good Thai food and my friend Nares who’s done an excellent job at giving me an education in this with the added bonus of being able to order most dishes without fearing mispronunciations.)
I’m also proud to say that this is really the first Erica-original recipe I’ve done. And it’s awesome.

These are extremely yummy and healthy for you. Way healthier than say nachos from a bar. This is based on a recipe from The Better Homes and Gardens: The New Cookbook. Unfortunately, I didn’t take pictures before they were devoured by me while I was watching House.
