Stuffed artichokes are tasty. However, they are moderately annoying to clean out to stuff, especially compared to how easy the rest of this recipe is. One artichoke is filling for two people. Of course, that depends on how many germs you’re willing to share because I wouldn’t try to cut them in half.

Spicy Parmesan Green Beans, Mushrooms, and Kale

In winter where I live, fresh vegetables are rather limited without making them travel thousands of miles. So it’s always nice to find a winter recipe with fresh, seasonal (or anytime) vegetables. Plus, it has a lovely, spicy flare.

Spicy Parmesan Green Beans, Mushrooms, and Kale

This recipe yields 6 to 8 servings, and if I make it again, I’ll cut back on the size since it’s just me and Jason at my house.

Upside Down Ravioli

Unfortunately, this dish didn’t come out as well as I thought it would. It was way too salty. Next time, I’d cut the salt completely from the dish. I’m also not so sure how I feel about really meat-intensive dishes, even if it was fake meat.

Cheese Manicotti

Okay, I know this is my portfolio, marketing, prosumer blog; however, I thought I’d branch it out a little into something I’m learning to love or loving to learn: cooking. I’m a vegetarian with a host of food allergies and have sometimes felt that food has been an upwards struggle throughout my life.

Last week was Jason’s 28th birthday and on Monday, I made him his favorite dish, manicotti. The following recipe is a mix from Golden Grain’s box, Jason’s mother, and my own improvisation.
